We have an extraordinary offer here, a collaboration between two of the top Italian food producers we work with that many of us have come to know and love, Caponi and Savini Tartufi. This is the second year that these two maestros combined forces after a small but successful trial run last year. For those that don't know about these two food masters, here is a short fresher. Caponi started in 1953 as a local fresh pasta shop that would deliver pasta daily to restaurants and households around the Pisa area. Today, they still use the same hand-made recipe with three high-quality yet straightforward ingredients, eggs, flour, and water.
Savini Tartufi is a truffle company founded in the 1920s and is one of the original 'Truffle Producers' of Italy, making an exceptional line of products made with fresh truffles. These artisanal companies are two of the best in their category, and combining them is pure magic. This sensational pasta is considered a laminated pasta, meaning that pieces of small black truffles the size of ground black pepper are rolled with the fresh pasta dough, becoming one before they are cut to size. The shape they use is the traditional Piedmonte Tagliolini shape, a long, thin ribbon pasta used for the regional dish, Tajarin. This is unique because the truffle flavor is in the pasta instead of on it, which hits the palate differently in slow-building intensity. It is another delicious way to enjoy some of the best pasta with very high-quality truffles. We suggest preparing this as simple as possible to enjoy all the subtleties of the semolina wheat flavor and the truffles' earthy perfume with just some olive oil or butter with some fresh parmesan. Ramp up the intensity even further by adding some of Savini Tartufi's truffle salt or one of their two new sauces we offering, Truffle Cream with Parmesan and a Basil Pesto with Truffles. We also have an otherworldy Butter with White Truffles that is a knockout on this pasta. We cannot recommend this enough for our clients, and for those that have tried the Caponi pasta and Savini's Products, this is a must. The truffle pasta is only made once a year, and we currently have the only boxes available in the USA!
