A fresh, aromatic, and balanced wine from Etna in one of the region's most famous crus, made with 100% Carricante, a grape varietal indigenous to Sicily. The vines here almost 20 years old and are planted on that famous Etna volcanic soil, which provides a very apparent minerality. Fermentation takes place in large barrels where it stays on the lees for five months—a wine to sit back and enjoy without having to think too hard about it.

It's somewhere in between, with thick layers of peach, apricot and lots of fresh citrus. You get very distinct mineral notes such as crushed stone, flint and volcanic ash in this expression. This would be the perfect match for a grilled bluefish with lemon and thyme."
