We were invited to a private tasting with one of our key Sake suppliers a few days ago, where we tried about 25 outstanding Sake's from many of our favorite breweries, plus a few new ones that we will be featuring in the coming weeks. Once again, one of our favorites was from the legendary Kubota Brewery located in the small village of Koshiji in Niigata prefecture on the eastern side of central Japan. The brewery is surrounded by untouched woodlands and rice fields along with the famous Maple Tree and Firefly villages that wouldn't be out of place in a fantasy movie.
While the main lineup for Kubota is excellent, their seasonal offerings are extraordinary. Like the Tokugetsu and Seppou that many of our Savvy Sake Clients have enjoyed, the Senshin is another limited seasonal Sake that follows the same philosophy for excellence.
Senshin is only released four times a year in small batches, and most of the bottles are allocated to restaurants only. However, the importer allows for a small number of high-end retailers to sell Senshin, and as of now, we are one of the only places allowed to offer this fantastic Sake.
Senshin is a sophisticated Sake that delivers a refined drinking experience. Made with a local Niigata rice variety called Takanenishiki, this variety is finer-grained than other traditional Niigata varieties like Gohyakumangoku and retains excellent quality after polishing which is 28% here. Takanenishiki is only used to make the Senshin and is attributed to its very clean and satisfying finish with soil analysis to ensure the best mineral content. The finished Sake is slowly aged for one year until the brewmasters consider it "mature" enough for release, increasing complexity and dynamics.
Senshin walks a similar path to the Tokugetsu but has more body and aromatic expression, whereas the Tokugetsu is an intricate play of subtlety. Senshin shows excellent aromatic complexity of citrus blossoms, steamed rice, minerals, and a slightly savory note buried deep within. The palate is where it truly shines and has an excellent viscous texture that gives up citrus fruit notes with an outstanding balance of richness and acidity with a very smooth, persistent, and refined mouthfeel showing the perfect amount of sweetness with a complex finish. This is best enjoyed with a slight chill or close to room temperature, and the warmer it gets, the more rich and round it shows.
Senshin is highly recommended for those that enjoyed the other Kubota creations or for those in need of an outstanding, special Sake. We have a limited amount available right now, and once it is gone, it will be months before we get more.
Another thing to note is that we always get fresh batches of Sake from our suppliers. Everything we offer is delivered quickly after their release and swiftly sold, ensuring that we always have current bottles and not ones sitting on the shelf for months or even years.
