Since 1863 Fuji Shuzo Co., owner of Ryusei, has been making traditional Sake. Brewed in the Village of Takehara using a traditional technique called "Kimoto-Zukuri," which takes four times longer than other methods, it is the most natural technique used in Sake production. The village of Takehara is known for having some of the best water for Sake, contributing to a smooth, clean taste and excellent minerality. The traditional Kimoto method is passed down from brewmaster to brewmaster. It uses natural bacteria and yeast in the mash to start fermentation allowing the flavors of the three rice varieties used Yamada Nishiki, Omachi, Hattan Nishiki to shine. Like winemaking, the natural yeasts provide more complexity and profoundness to the finished product, displaying equal amounts of fruit, flowers, and earth. Ryusei Garyo, like the Bekkakuhin, is a Junmai Daiginjo; the highest level of sake. The Garyo, however, is made to a much higher standard of quality and is the ultimate expression of the Ryusei brewery and traditional Kimoto-style Sake. Like we see with many high-end Sakes, Garyo is also matured before release adding to the sheer complexity and delightful mouthfeel. The Garyo is rich yet delicate with touches of savory-umami, earth, white flower petals and sees an almost unmatched level of refinement and purity. It is like a grand cru Burgundy with its weightless power and profound elegance, always showing something new in the glass. It is one of the best Sake's we have ever tried made in a pure Kimoto style and is extremely limited. Those who have tried the Daishichi Shoka, which is also made in a Kimoto style, will find familiarity here but taken to another level in every way imaginable. We have the only bottles currently available in the world, but the quantity is very limited, with just over a case in stock.
