As many of you know, 2021 was a very short vintage due to frost damage in the spring. However, the grapes that were left on the vines turned out to be quite exceptional and, coupled with a cooler vintage, resulted in some classic wines. Jean-Marc Boillot is an excellent example of this classic style at the Bourgogne level, and after tasting it the other day, we were impressed. The wine has incredible aromatics for a white Burgundy of this price range, excellent depth, and a lovely lingering finish. A beautiful and pure wine sourced from younger Domaine holdings, it is the perfect introduction to the style of JM Boillot. Made with Hand-harvested grapes that are pressed pneumatically before alcoholic fermentation and racking on the lees. The wine then goes through malolactic fermentation before aging in 30% new oak for 11 months.
