We have always loved the back vintage selections from Defaix, their classic Chablis structure, minerality, and long aging in the bottle under high-quality cork; these old ex-cellar beauties are so impressively good. We have offered a couple of vintages of the Cote de Lechet, but this is a first for the 2005 vintage. Cote de Lechet is known for its complex and powerful wines, which comes through in this bottle. This has only gotten more sophisticated with age and is one of the best examples that Defaix has ever released. We have always found it quite spectacular how well Defaix's wines keep fresh and energetic after 15 years, and it surprises us every time we try one. Finding a Chablis with this much age is a real rarity, and the 2005 Cote de Lechet is a magical bottle that is a must try.

"The 2005 Chablis 1er Cru Côte de Léchet is more complex than the Vaillon, unfurling with complex aromas of honeycomb, mandarin oil, fresh mushroom, almond paste and oyster shell. On the palate, it's full-bodied, rich and gourmand, with a satiny attack, a deep, concentrated core and tangy balancing acids. It's a textural, sapid Chablis that will work well at the table."
