An excellent Champagne House based in Mesnil, Diebolt-Vallois has been a staple for Envoyer for years and continues to be one of our favorite growers. The 2015 Blanc de Blancs is a new release, and another stunning bottle from this house, taking a page out of their Tete de Cuvee Fleur de Passion's book of pinpoint purity and precision. The Chardonnay for this Cuvee is from the crus Cuis, Chouilly, and Epernay, with young vines from Cramant, entirely vinified in stainless steel and finished with a low dosage. Champagne expert Richard Juhlin has given accolades to this Cuvee in almost every vintage going back to 1959, and 2015 should be another exciting example of their vintage Blanc de Blancs. It is an excellent Champagne with incredible cut and minerality, showing aromas of white flowers, stone fruits, citrus, and brioche. This gives way to mineral-driven apple, nougat, and tons of dry extract that lingers and stains the pallet yet leaves your taste buds refreshed and wanting more. A great bottle of Champagne in the making that can rival $100+ bottles of Blanc de Blancs.
