We know 2007 was not the most exceptional Champagne vintage ever, but growers like Vilmart and Diebolt Vallois made excellent wines for the vintage. I opened the 2007 Fleur de Passion last night at our local sushi restaurant, and I’m happy to say it was a lovely bottle. The bottle just came from Diebolt Vallois's cellar, and it was very fresh and vibrant and starting to develop some secondary characteristics. The passion and commitment that Jacques and his family possess are uncanny, and they are some of the most beautiful people I have ever meet in the region.
