We’ve loved the back vintages from Daniel-Etienne Defaix for so long. What makes these wines special is their classic Chablis structure and minerality and long aging at the Domaine in tank and in the bottle. The Domaine also uses one of the highest quality corks you can buy, and the wines drink a lot younger than their peers, and they typically can cellar the wines for at least a decade at the Domaine after bottling. These old ex-cellar beauties are so much fun and have an aged character while retaining freshness and never having oxidation issues. The 2010 Les Lys is a gorgeous example of a mature Chablis, and the current release from Defaix showing aromas of liquid minerals, delicious golden apples, and orchard blossoms before giving way on the pallet to ample, lovely fruit with good acidity, lift, lots of dry extracts, and salinity on the finish. Another excellent Chablis from Defaix, this should continue to drink well over the next two to three years.
