2012 Camille Savés Champagne Grand Cru Brut Millésimé Bouzy [Pre-Arrival]
One of our favorite growers in Bouzy next to Paul Bara, the rose here has been a mainstay for us, offering a top value that many of our clients have recognized throughout the years. That same breadth flows throughout the range at Camille Saves, and we, for the first time, can offer their Brut Millesime, one of Camille Save's top Champagnes and only made in outstanding vintages. This is an exciting bottle because 2012 was a great Pinot Noir vintage, and this features a healthy dose of Bouzy Pinot Noir (80%) with some Chardonnay (20%). The vines are on average 35 years old, which we have come to learn is around the sweet spot when making Champagne, grown right in the heart of Bouzy. The fruit is hand-selected before a gentle pressing where only the first run of juice is used. The juice goes through a temperature-controlled fermentation in stainless steel before the family picks the best vats for the blend. The wine is then bottled, aged on the lees for 6 to 7 years, and disgorged with a 7 g/l dosage. It is a rich champagne with incredible purity of red fruit and notes of spice, baked bread, white flowers, and chalky minerality. It is a complete package, especially at this pricing, and highly recommended for the grower Champagne lover.
