Lassalle has produced very fine Champagne in the village of Chingy-les-Roses in the Montagne de Reims since 1942. The 16-hectare estate follows the traditional practices that Jules Lassalle implemented before his passing, including the use of a traditional basket press and vinifying every parcel separately. Since 2006 J Lassalle has been operated by Jules' Granddaughter Angeline and has 16 hectares of vines spread over an incredible 45 parcels made up of 48% Pinot Meunier, 30% Chardonnay, Pinot Noir 22%. All of the Champagnes are hand-harvested and go through a rigorous selection. At the top of the list is the special club sourced from 50+-year-old vines made of a blend of 60% Chardonnay and 40% Pinot Noir from all premier cru sites. The Special Club is aged on the lees for around ten years before release and is only made in outstanding vintages seeing a dosage of 8g/l. 2012 is a stunning vintage for this Champagne and straddles the line between decadence and intense energy.
