Emmaunel Lassaigne is one of Champagnes top growers. His Champagnes can be very hard to find in the states. His vineyards are located in Montgueux which is a continuation of the limestone from the Cote de Blanc. He farms organically, lets the grapes reach full maturity before harvesting, ferments in oak and stainless steel. The Champagnes are riddled by hand, and because he gets great physiological maturity in the vineyard, he doesn’t add any dosage. His wines have amazing focus, energy, and vibrance. Clos Sainte-Sophie is now one of his top Champagnes, and in a vintage like 2012 a must buy for the grower Champagne lover!
