A Top vineyard in Chablis not far from Bougros, Jean \u0026amp; Sebastien Dauvissat's Preuses is one of the only wines he ferments in barrel, an hommage to the traditional Chablis style, seeing about 25% new oak. This is a somewhat opulent wine and has a definitive Grand Cru concentration but is still light on its feet, playing to the classic Chablis style. We love Jean \u0026amp; Sebastien Dauvissat for their amazing price-quality and traditionally made wines with excellent expression. The palate impression of the bigger and richer flavors is, somewhat curiously given the increase in size and weight, finer and even more seductively textured, all wrapped in a sappy and lingering finish where a hint of bitter lemon is present. This should reward 5 to 7 years of cellar time.
