The 2015 Clos Cazals is the newest release and sits at the top of the range, coming from one of Champagne’s rare walled vineyards: a 3.7-hectare Grand Cru clos in Oger planted entirely to Chardonnay. This cuvee sees the oldest vines in the clos, which was planted in the 1950s by Delphine Cazals’ grandfather. A portion of the wine is raised in oak before spending at least ten years aging on the lees in the domaine’s vaulted cellars, with only a very low dosage at disgorgement. The result is a striking, serious Blanc de Blancs that combines white flowers, citrus, and stone fruit with chalky minerality, subtle pastry notes, and a long, precise finish. There is richness from the warm 2015 vintage and extended aging, but the wine remains focused and energetic.
