This rare and spectacular wine from Northern Italy was just released eight years after the harvest. It comprises the Ribolla grape, fermented in Georgian amphorae buried underground. The wine sees an extended maceration with wild yeats employed with no temperature controls. The wine rests another five to six months after fermentation in the amphorae and is then transferred to large older oak barrels, where it ages for another six or so years. The wine is bottled unfiltered and un-fined.
