This is typically the best buy in the cellar, the 2015 Chablis Vaillon VV is a gorgeous example that has just been released from the Domaine. The Domaine tends to hold the wines back until they are ready to drink. This parcel is planted to mostly 70-year-old vines, and this wine, along with the Chablis Preuses, sees some barrel fermentation with about 25 % new oak. The 2015 Jean et Sebastien Dauvissat Veillon VV possesses tons of dry extract and showcases the generous nature of the vintage. The wines age very well here too, and this one should drink well for a decade or more!
Antonioi Galloni 93 pts! The 2015 Chablis Vaillons Vieilles Vignes 1er Cru is absolutely gorgeous. Extended aging both prior to and after bottling yields a creamy, beautifully balanced Chablis that is incredibly expressive today. Apricot, yellow flowers, brioche, baked apple and a touch of French oak infuse the 2015 with striking layers of nuance. Ample and generous, the 2015 is ready to deliver pleasure upon release. This is such a pretty wine and also a great example of the year. (Drink between 2020-2030)
