This is a Private Label of Cote de Lechet From Bernard Defaix made by his two Didier and Sylvian Defaix, who run the Domaine. Bernard Defaix's Domaine holds the most considerable portion of Cote de Lechet in all of Chablis, and the selection of vines for this bottling are on average, 35 years old. The Cote de Lechet sees 20% vinification in older oak barrels between 1 and 5 years old with the remaining juice going into stainless steel. This is a great, classic address for in Chablis and arguably has one of the best bottlings of Cote de Lechet, and though this is a separate bottling, it is all Domaine fruit. It is a beautiful bottle with aromas pungent minerality giving way to complex yellow fruits and white flowers. The palate is rich and powerful, but the excellent acidity keeps the wine fresh and focused, finishing on lemon curd notes, saline, and tons of dry extract. An incredible bottle for the price as it is harder to find Premier Crus at 30 dollars or less, especially from a proven domain like Bernard Defaix, and is an excellent choice for Chablis drinkers.
