We don’t tend to offer too many Cabernet Sauvignons from California due to the fact that it's not quite our niche. Occasionally we will find a more classic example that is delicious and noteworthy. The 2018 Nik Pegasus Cabernet Sauvignon is just that wine. Nik Pegasus is a high-end negociant that sources grapes, juice, or wine from renowned sources. The mission here is to make wines that reflect the sites they are sourced from but with a European flair. The fruit for this Cabernet Sauvignon comes from Paso Robles and is blended with a small percentage of other Bordeaux varietals. The result is a very well-balanced lower-alcohol Cabernet Sauvignon from the Paso Robles region. Aromas of cassis, spices, herb, and violets tower from the glass. On the palate, there is a lot of cool fruit flavors that are lush, balanced, and long. When we tasted this wine, we would have never guessed the fruit was sourced from Paso Robles, and the abv comes in at a low 13.8% for the region. This is one of the best Cabernet Sauvignon we have tasted from Paso Robles and we give our highest recommendation to this wine. Drinkable now, this wine should age effortlessly over the next 5 to 7 years.
