An excellent example of Village Chablis, this is sourced from the north-facing section of Montmains that faces the Vaillons just to the north. The soils here are rich in Kimmeridgian stones and have a medium level of clay. Grapes are hand-harvested from 40+-year-old vines before pressing, seeing with native yeast fermentation with aging in stainless steel. The 2019 Jean Collet Chablis AC is a lovely crystalline and pure Chablis that carries premier cru weight and persistence. The wine has aromas of white flowers, citrus, and textbook minerals that give the wine a wonderful sense of place. The palate is very clean and pure, with lingering notes of lemon, lime, liquid minerals, and saline that dance on the palate. It is hands down one of the best village Chablis we have tasted in a long time, and an incredible value buy for Chablis. We typically aren't enthusiastic about wines at this level, but this is well warranted.
