
We are down to the last bottles of these two excellent Chablis buys in stock from Collet. Heir to a long line of Chablis Growers, Jean Collet started his Domaine in 1954. Later, when Jean retired, his son Gilles took over but became afflicted by nerve damage on part of his body and had to pass the torch early to his son Romain. At 21, Romain took over the domain and began working in the cellar and the vineyard. He started incorporating more organic and biodynamic practices into his regimen, achieving organic certification in 2018, which is no easy task. The wines have exploded in quality from better farming practices with the use of natural yeasts, a more sustainable approach, and different vessels for fermentation, including concrete eggs, which he expertly puts to good use for the Les Forests and Montee de Tonnerre. Romain is dedicated to extending the quality of his wines, and these two crus are beautiful classic Chablis examples. The wines from Jean Collet are very rare, and we have some of the only bottles available in the USA from any vintage. These are fantastic buys for the vintage, and we have a limited amount of each available at this low pricing.
Jasper Morris 90-93 A blend of Chapelots and the central triangle of Montée de Tonnerre. Some coconut here, some rich ripe bacon with yellow fruit too. One of the more powerful wines, all vinified in wood (though quite harmonious) then racked after malolactic, with the part in newer wood going into tank and the older wood to newer barrels.
