Vaillons is one of the larger Premier Cru sites in Chablis and features subdivisions that include Sechet and Les Lys. Located west of the west side of the Serin river, Vaillons features classic Kimmeridian soils and is one of the more elegant and perfumed examples of Chablis. The Moreau's vines here were planted in 1945, and they note that this is one of the first premier cru sites they harvest because the old vines produce tiny concentrated, ripe fruit and are looking to preserve the freshness and vibrancy. Fermentation is in stainless steel with indigenous yeasts, aging on the lees for six months and then resting in tank again for 18 months before bottling. The Vaillons is the perfect intersection of elegance, minerality, generosity, and vibrancy.
