One of Sancerre's great producers, Vacheron, is a team of two cousins, Jean-Laurent and Jean-Dominique Vacheron. The duo employs excellent certified organic and biodynamic farming practices on their 47-hectare family estate, fertilizing with a homemade compost pile, limiting yields, harvesting by hand, and wild yeast fermentation. These are cristal clean wines that are super transparent with classic crisp Sancerre fruit. This duo has some very coveted vineyard sites, applying a more Burgundian influence to Sancerre.
We have one of their top single-vineyard wine of the 2020 vintage today, the Chambres. Located on a plateau just above the site of Le Paradis (which they also bottle) and planted on limestone and red clay at just over 1,100 feet altitude. The Cousin's vines are on the younger side, between 15 and 25 but provide incredible energy to this more generous example of Sancerre, though not lacking in acidity or mineral presence, two prerequisites for an excellent Sancerre. The dynamic created between the more decadent flavors and the transparent and energetic style of this Cuvee really makes for an excellent Sancerre and is a very approachable bottle now.
