Sottimanos' story begins in the 1960s when Rino finished enology school and bought his family's estate in Cotta, located between Nieve and Barbaresco. Rino always believed in maintaining the balance of his soils and made a choice to stay away from chemical products in his vineyards whenever possible. Vinified using traditional methods, wild yeast, long macerations, malolactic fermentation on the lees, and very limited new oak, just as it was done in the old days. Because of the vineyard's location, the vines draw the body and richness from Nieve and the balanced tannin structure from Barbaresco. We have two of the top wines from the 2020 vintage for Sottimano. The 2020 Fausoni and Pajore are equally incredible and the greatest examples of all time, even better than the great '15s and '16s. We have low pricing on both of these extraordinary wines, which are some of the only bottles available right now. These are not to miss wines for fans of Piedmont and are two of the wines of the vintage.
