John Gilman 94+ Along with les Perrières, the les Cailles is usually one of the most red fruity wines in the Chevillon cellars each year, but in 2021, this wine is quite black fruity in personality. The nose wafts from the glass in a complex and very precise mix of cassis, black cherries, woodsmoke, pigeon, coffee bean, a gorgeous base of soil tones, currant leaf and a deft framing of vanillin oak. On the palate the wine is deep, full-bodied and rock solid at the core, with great mineral drive and grip, ripe, buried tannins, fine focus and a long, perfectly balanced and vibrant finish. This will need plenty of time to blossom, but it is going to be stellar. (Drink between 2035 - 2100)
