After our 7-year rice offer's fantastic success, we thought it would be nice to offer their mainstay rice, which besides the age difference, are identical. Most of us are familiar with arborio rice, the main rice used in the classic Italian dish, Risotto. Arborio rice is your basic rice for Risotto, and it does quite well. However, there is an even better option, called Carnaroli Rice. Acquerello is considered the best producer of Carnaroli rice in the world, and as a result, many high-end and Michelin-starred restaurants use Acquerello rice. Acquerello has been cultivating rice on the Vercelli plain in northern Italy not far from Torino since the 1400s and has devoted 200 hectares to rice cultivation. Much like we see in vineyards, Acquerello promotes a natural environment that allows other flora and fauna to thrive for biodiversity while protecting the delicate ecosystem. There are 20 different quality control steps the rice has to go through before it is approved, and of those, there are three main steps that Acquerello has invented and implemented that takes great rice and transforms it into the ultimate rice. The first is aging the rice for 1 or 7 years. This offer is for the one-year-old rice, which is the bulk of Acquerellos production. The aging enhances the flavor, brings out more richness and nuttiness that it wouldn't have otherwise in a than the 7-year. This aging also stabilizes the starch, which allows it to absorb water better and release less starch during cooking. The second is whitening via a helix, which is a delicate process that rubs the rice and leaves the whole grain intact without damage. The third step is during the whitening process; the germ is stripped, which is the most nutritious part of the rice but is restored through a secret patented process they invented. As a result, Acquerello is the only rice in the world with the same nutritional properties as brown rice. The difference is incredible, and after trying this, we will never go back to regular rice, and while it isn't as creamy and rich as the 7-year, it is still stunning.
