The first is aging the rice for 1 or 7 years. This offer is for seven-year-old rice, which accounts for a mere 1% of Acquerello's total production. The aging enhances the flavor, brings out a richness and nuttiness that it wouldn't have otherwise, and aging for seven years amplifies that effect while also stabilizing the starch, which helps it absorb water better, releasing less starch during cooking. The second is whitening via a helix, which is a delicate process that rubs the rice and leaves the whole grain intact without damage. The third step is during the whitening process; the germ is stripped, which is the most nutritious part of the rice but is restored through their patented process. As a result, Acquerello is the only rice globally with the same nutritional properties as brown rice. The difference is incredible, and after trying this, we will never go back. It is so creamy, rich, and resonant with flavor.
