It can be hard, especially for those starting to tell if the equates to better quality for Sake. We are always skeptical of expensive bottles but were allocated Asahiyama 'Tsugu' from Asahi Brewery, the same producers of Kubota. After trying a bottle with Sushi, we were sure that this was the best Sake we have ever tried, beating out the Legendary Juyondai and Dassai Beyond. While drinking, we had flashes of resemblance to Montrachet, extreme focus, profound complexity, incredible depth, perfect richness, and seamless balance. This inspired one of those moments when eating or drinking that is so mind-blowing there are no words to express what is being experienced. One of the critical components to this Tsugu's brilliance is the type of rice used, a cross between the 'King of Rice'; Yamada Nishiki, and the 'Yokozuna of the East'; Gohyakumangoku. The result is known as 'The Thoroughbred,' called Koshi Tanrei, which draws the best qualities from its parents — inheriting its richness from Yamada Nishiki and its light, ethereal energy from Gohyakumangoku. There are so many facets to this Sake, including white flowers, cracked pepper, stone fruit, malt, saline minerality, and even linden berry; it's hard to wrap your head around it. This is best served with a slight chill and paired with simple, delicate foods. Each bottle comes numbered out of 2500 and individually packaged in a gift box. Tsugu is a masterpiece like a sonnet from Shakespeare, an exciting journey from Mozart, and captivating like Kurosawa.
