After going back and forth, enjoying both the Pappardelle and Tagliolini, the Tagliolini has started to become our favorite and is a bit more of a delicate pasta that isn't as hearty and seems to sauce up and hold ingredients a bit better. Tagliolini is a pasta we hardly ever see here and is a regional shape that originates in Piedmonte, where you can find it on the menu at nearly every restaurant. We have been working diligently to source some of the best artisan foods globally and have tasted close to 100 different items at this point, with only a handful making it to our store. In 1953 Caponi started in a small workshop in Tuscany, making fresh and dried handmade egg pasta to sell locally in Pisa and other Tuscany areas. The pasta began to catch on with people, and in the 1980s, with demand increasing and hopes of having a wider reach, Caponi decided only to make dried pasta while also upgrading to a larger facility. Even though they have evolved in size, the pasta is still almost entirely made by hand, and the production process has not changed since the early days in their small workshop. This is a labor of love, and Caponi only sources the best ingredients that they can, never cutting corners, making something as close to fresh pasta as you can get without breaking out the pasta maker yourself. This is made with high-quality Semolina flour along with fresh eggs from a local farm. After cutting to size, the pasta spends 48-80 hours drying at room temperature, depending on the weather, before it is packaged. This slow drying process gives the pasta more of a homemade feel. It also preserves the pasta's nutritional value since it was not affected by high temperatures for drying while also maintaining elasticity and the best flavor possible. So simple yet so good, which is the driving force behind many great Italian foods, this is on par with fresh, restaurant-quality pasta and is easily one of the best pasta's we have ever tried. Such fresh flavor and the perfect amount of bite these pasta's are the ultimate base for countless meat and vegetarian pasta dishes. Another significant part about this pasta is that it cooks up in half the time as conventional pasta, only taking about 5 minutes before completion. We have had this secretly stocked for a few weeks now, and it has been hard not to take a box home every night; even a few clients have grabbed a box already on a whim and come back for more. It's a great easy way to have an impressive dinner at home, and one package will feed about 3-4.
