We have two limited edition monocultivar olive oils from one of our favorite producers. Decarlo has been making olive oil in Puglia since 1668 and is one of the leading producers in the south of Italy. Decarlo has nearly 25,000 olive trees covering a total of 100 hectares, all of which are grown organically and have multiple quality certifications. Olives are harvested by hand between fall and winter and are processed within 24 hours to preserve the freshness. Though new technology is used, some traditional techniques like using a stone mill are irreplaceable in producing the highest quality olive oil, preserving the delicate flavors. These two olive oils are only available for a limited time every year. They are made from two specific varieties of olives harvested in the Bari region in northern Puglia, called Favolosa and Peranzana. These two olives have entirely different profiles, and the Favolosa is considered a more feminine olive oil while the Peranzana is more masculine. It's always entertaining to try them side by side, and it's easy to do so in these little bottles, which keep the cost down. These are both great finishing oils for salads, meats, vegetables, soups; the list goes on, and we have some of the only bottles available in the USA.
