Decarlo is an old school family of traditionalist olive oil makers dating back over 400 years to 1598 when they first purchased the estate in Puglia. We recently found out about Decarlo, tasting through about ten different products, all of which are artisanal representations of classic regional "Peasant Food," consisting of many preserved items from artichokes to these delicious sundried cherry tomatoes or Pomodorini. These are incredible estate-grown cherry tomatoes picked at peak ripeness and dried in the southern Italian sun. The dried tomatoes are preserved in one of the Decarlos famous olive oils made with one of the oldest olive mills that it still in use today. These are simple yet unbelievably good made with only two ingredients, tomatoes and olive oil. They have just the right amount of bite, almost like al dente pasta with no tough, leathery skins like many sundried tomatoes have and no bitterness. A bright pop of acidity leads to very savory umami flavors, complemented by a touch of natural sweetness and richness from the olive oil. It is a small symphony on the palate, pairing exceptionally well with Italian staples like fresh burrata, pasta, and pizza but could also work exceptionally well with something like ramen to add extra layers of umami. The leftover olive oil can also be used for drizzling over dishes for some extra flavor or in a vinaigrette. These sun-dried tomatoes from Decarlois are a Simple yet delicious Italian staple that will blissfully transport you to the southern Italian countryside, and if you drink fine wine, why not pair it with the finest foods.
