Jose Gourmet is a food company specializing in Conservas that we got acquainted with a few years ago. This is a newer name in the category, and the idea here was to revitalize some of the delicacies that were either losing quality or disappearing while also promoting the health benefits of different seafood. Ventresca is the belly cut of the tuna and is the Mediterranean version of Toro. It is a fattier cut that is rich and creamy, almost melting on the tongue but with such a satisfying texture. There is an excellent depth of flavor between brine and richness, often, we think of tuna as a kind of inert, but the explosion of flavor here is wild.

Cacaosuyo Dark Chocolate Chocolate Cuzco 80% (2.47 oz) x1
This Cuzco 80% is made with a strain of cacao called Chuncho, which encompasses around a dozen related cultivars of the Upper Amazon and is now considered to be native to the Quillabamba Valley of central Peru. It is believed to have been domesticated by the Matshiguenga people, whose members were ancestral inhabitants of the Valley. Chuncho trees bear small yellow fruits with small beans (less than 1g per bean), known for their high-fat content and very high-altitude growing region of 1,300-4,600 feet.Cuzco 80% slowly starts out with sweet red and blue fruits, with a touch of tartness that melts into light and fruity herbal nuances and with notes of dried plum and banana, leaving behind mouth coating a dry extract feel and a finish that doesn't let up, with notes of fresh herbs and red fruits for what seems to be minutes

The Dynamic between sweet and savory and enhances the flavor of strong meats like lamb and the addition of semolina flour brings a rich nutty flavor and different texture, and is more of a spread than typical mustard. Excellent on sausages, burgers, sandwiches, and glazes on meats like pork. Separation on this product may occur, but shaking the jar or siring will bring it right back to normal.

Mostarda Red Pepper Jelly- Typically Mostarda has a mustard flavor, but this is a new school take on a classic Italian condiment that keeps the name with none of the mustard. A sweet jelly made with pureed bell pepper with the consistency of honey balanced out by red wine vinegar and a touch of spicy red pepper. Simple, subtle flavors that work incredibly well together that pair very well cured salty meats, grilled meats, soft cheeses, or a glaze on salmon (which is delicious).
