Founded in 1625, Fukumitsuya is the oldest sake brewery in Kanazawa and is dedicated entirely to pure Junmai brewing, meaning no added brewer’s alcohol. Kuroobi means “black belt,” and Do-Do carries the sense of confidence or majesty, which fits the style well: this is not a light, fruity sake, but a more serious, umami-driven Junmai with texture and presence. It is brewed in the traditional Yamahai method from Yamada Nishiki and Kinmon Nishiki rice polished to 65%, using pure underground water fed by the snowmelt and rainfall of Mount Hakusan. The result is a full but clean sake with rice depth, gentle acidity, earthy complexity, and a long, crisp finish. It is excellent chilled, at room temperature, or gently warmed, making it a versatile bottle for grilled fish, mushrooms, pork, roasted chicken, soy-based dishes, and richer cheeses.
