We had a small Sake tasting a few days ago featuring bottles in the $40 range, and our winner of the day was the "Tropical" from Koimari Shuzo. Komari Shuzo is a traditional Japanese brewery in the Saga prefecture of Japan. The brewery has a rich history, dating back over 100 years, and is known for its premium quality sake. The brewery was founded in 1909 and has been producing Sake ever since. Koimari Shuzo is located in the town of Arita, famous for its porcelain made for Royal families. The brewery uses local spring water, which is soft and low in minerals, to make its Sake. Soft water is ideal for sake brewing as it helps to produce a clean and crisp flavor.
The brewery uses traditional methods to make its Sake, including a fermentation process that combines koji, yeast, and steamed rice. The koji is a special fungus that breaks down the rice starches into simple sugars, which the yeast can ferment.
Tropical is the best Sake that Koimari Shuzo produces and is a Junmai Daiginjo made with the old heirloom rice variety called Omachi, which is milled to a standard 50%. Omachi rice is difficult to grow, but when used, it provides a rich, full-bodied taste and high acidity and complexity. This Sake is made using a particular strain of yeast known for producing fruity and tropical flavors, and that is where it gets its name.
The Tropical Sake has a beautiful, clear appearance and a delicate aroma of tropical fruits of pineapple, mango, lychee, and quince, accompanied by a floral perfume—lovely depth and persistence.
