Made with 100% Okayama-grown Omachi polished to 60%, this Tokubetsu Junmai (Tokubetsu designates higher quality than normal Junmai) shows the naturally rich, earthy, and complex side of the rice, with more depth and texture than a lighter, more aromatic sake. It is made in a Muroka style, meaning unfiltered before bottling, and is aged for a year, adding extra roundness, savory complexity, and structure. In the glass, it is full-bodied and distinctive, with citrus, cedar, sunflower seed, spice, rice depth, bright acidity, and a dry mineral finish.
