Both his father and grandfather were brewers, and Noguchi Naohiko began brewing in 1949 at the young age of 16. Not even old enough to drink yet, he set out on a path that would create the Ginjo category and revitalize the almost forgotten Yamahai technique. At 28, he became head brewer of the Kikuhime, one of the top breweries, where he made Sake for 36 years. Noguchi Naohiko eventually retired in 1997 to come back 20 years later at over 80 years old to run a new brewery being built in Komatsu, aptly named Noguchi Naohiko Kenkyusho, which doubles as an institute where aspiring brewers come to learn. Muroka Junmai Daiginjo is the creation of 80 years of Sake brewing experience from master brewer Noguchi Naohiko. The representative for the company told us that Noguchi expressed that it took him 70 years before he truly learned to make Sake, and, at 92, he said he had only been making great Sake for 10 years. Noguchi has a unique style that he taught himself how to make through years of trial and error, and finally, he is able to make Sake that is both gently sweet at first sip yet completely dry on the finish, which is now his trademark style.

Made with Yamada Nishiki, dubbed the king of rice polished to 50%, this is an extraordinary Genshu-style Sake, meaning it is bottled, undiluted, unfiltered, and unpasteurized at cask strength. This is so complex, with notes of white flowers and tropical fruits like pineapple and papaya, as well as pear, green apple, orange rind, sesame seeds, white grapes, and minerals. The palate has a fantastic attack with a silky texture that starts with a touch of sweetness and rich power that shifts and turns drier and more elegant as it flows over the palate toward the finish. Echoing some of the more tropical and perfumed flavors with excellent malty rice expression, amplified by a laser-focused acidity. It is impeccably crafted and shows a sensational balance of power and elegance, nearly hitting every note that makes Sake so good. This has it all and is one of the most serious examples of Junmai Daiginjo, hand-crafted by one of the most legendary brewers still active today. This is typically mostly sold to restaurants, and today, we have low pricing on some of the only bottles available outside of Japan.
