Antonio Galloni 91 (NV Gaston Chiquet Brut Blanc De Blancs D'aÿ Sparkling White) Gaston-Chiquet's NV Brut Blanc de Blancs d'Aÿ, a rare pure Chardonnay from Ay, is one of the most distinctive wines in the range. Bright and floral, with all of the texture that is such a signature of wines from the village, the Blanc de Blancs d'Aÿ has tons of character. The balance of layered lemon confit and ripe pear notes with more chiseled, mineral inflections makes for an absolutely compelling Champagne. Disgorged: July 2017. (Drink between 2018-2023)

"Disgorged in July 2017, the NV Brut Grand Cru Blanc de Blancs d'Aÿ opens in the glass with a youthfully reserved nose featuring notes of lemon oil, crisp orchard fruit, chalky soil tones and hazelnuts. On the palate, the wine is medium-bodied, bright and racy, with a tangy spine of acidity, a delicate core of fruit and an elegant, pinpoint mousse. This needs a few years on cork to come into its own, as it's quite tight-knit right now."
