Jean-Paul took over from his father Marc in 1997 and today works roughly 15 hectares spread across an extraordinary collection of Premier and Grand Cru parcels, vinifying his many individual plots separately before blending. The Sélection is built around 70% Pinot Noir and 30% Chardonnay from vines averaging more than 50 years old, with Pinot Noir coming primarily from Premier Cru Mareuil-sur-Aÿ and Avenay-Val-d’Or and Chardonnay from Mareuil-sur-Aÿ and Bisseuil. Fermentation and aging take place in stainless steel with full malolactic conversion, followed by roughly 30 months on the lees and a restrained dosage of 6 grams per liter. The result captures exactly what makes Hébrart so compelling: generous orchard and red-fruit character from the Pinot Noir, balanced by the lift and chalky freshness of Chardonnay, with pear, white peach, citrus, and raspberry joined by white flowers, almond, delicate pastry, and wet stone. The palate has real depth and vinosity, yet the mousse remains fine and the finish fresh, crystalline and distinctly mineral. This is approachable now, especially in half-bottle. Still, as we have noticed with many of the Hébrart Champagnes, they do very well with extra time in the bottle and have considerably more substance and complexity than most non-vintage Champagnes at this level. The cépages is seventy percent pinot noir and thirty percent chardonnay, with all of the vines contributing fruit for this bottling at least forty years of age. The vins clairs all go through malo and the wine was aged sur latte for three years prior to disgorgement in October of 2019. The nose offers up a fine blend of white peach, apple, sourdough bread, chalky soil tones and a topnote of spring flowers. On the palate the wine is bright, full-bodied and focused, with a good core, frothy mousse and fine length and grip on the complex finish.
