An insider Champagne buy this is a special Cuvee with roots connecting to the Chartogne-Taillet wines. Pierre Baillette's Domaine is made of only three plots located in Troits Puits, Rilly de la Montagne, and Verzenay, all classified premier crus based in the Montage de Reims. The Domaine grows three varietals of grapes, Chardonnay, Pinot Noir, and Pinot Meunier, with incredible devotion and respect to the land abstaining from herbicides and pesticides while being certified organic and plowed by horse. A sustainable approach to winemaking is always welcome and is one of the calling cards to a great grower; however, the real fun here is that Alexandre Chartogne's wife Perine Baillette makes these wines, and while she's is not as widely known as her husband, its always great to find a wine that is made by a family member that is on top of their game, and more often than not they are incredible values. She surely consults with him at times, and for this Cuvee, the blend is 40% Chardonnay, 40% Pinot Noir, and 20% Pinot Meunier from Troits Puits, of which 70% comes from a single vintage, with the remaining being reserve juice. It's a fresh and vibrant Champagne with excellent citrus notes, green apples, a lovely floral perfume, and a gorgeous showing of minerality. Refreshing and complex the Champagne is disgorged with a 5 g/l dosage.
