Our first offer of this pasta, Orecchiette, is a traditional 'thumb print' pasta from the southern Italian region of Puglia. Sabatelli was founded in a small workshop in 1976 by Donato Sabatelli, who had a dream of becoming a great pasta maker looking to set himself apart with the quality of his ingredients. Donato has always looked for an extra something to push his pasta's quality further, meaning sourcing the best wheat possible and making everything by hand just as it would have been done for centuries. Orecchiette means little ears in Italian named after their shape. It is a thicker pasta similar to a dumpling a little larger than a quarter and is the basis for many dishes but is traditionally prepared with Rapini, fresh mozzarella, and olive oil. However, it is equally good in tomato-based dishes, as well as with meat and brothier sauces. Their thickness gives a hearty and rustic feel while delivering a delicious semolina flavor. These do take a bit longer to cook, so make sure to use a larger pot with plenty of water, or it might take a while. We have a few food products that pair well with this pasta, one being the sunkissed cherry tomatoes in olive oil from DeCarlo.
