While known for their different kinds of nuts, and nut oils, Pariani also has an extensive line of candied fruit from bergamot peels to candied green walnuts. These products are even rarer and limited than their nuts, and after taking everything, our supplier had, we have the only jars of Pariani's black cherries in the USA. In Italian, these are called Amarena di Cantiano Candita, which are sour black cherries from the small commune of Cantiano located in Italy's Marche region. These cherries are a little smaller than average and are not very good when eaten raw due to their high acidity. However, when the fruit is candied by placing it in a simple syrup made of sugar, black cherry juice, spice, and citrus peel, they become beautifully balanced and delightful. The dynamic between sweetness and acidity is perfect and allows the bright flavor of black cherry to shine through with very subtle baking spices on the back end. Another thing to note is the fantastic texture here, these still have a wonderful bite to them and are not mushy or leathery, and so fresh they tasted like they were made yesterday. These are easily the best-preserved cherry we have tried, better than anything in alcohol or otherwise, the depth of flavor, balance, freshness, and texture outdo anything on today's market. The cherries are also the most versatile of any of Pariani's candied fruit and can be used in numerous ways from sweet to savory applications like Cocktails, crostinis with different cheeses, duck breast, Fois Gras, in plain yogurt, oatmeal, cereal, in baked goods like muffins or scones, and even for different sauces or on ice cream. These are incredible and show how Pariani focuses on quality above all else.
