Pariani is one of the most technologically advanced food companies in Italy. Relatively new, Pariani is a family company founded in 2010 with the goal of "Research and Excellence," a Pariani Slogan. Pariani is known for its high quality nuts and nut oils but also devoted to the nutritional aspect of food. The owner wrote his dissertation on Hazelnut oil and has since invented a top-secret machine said to make the best nut oils in the world, and if you are lucky enough to visit, you will be told pictures of the machine are not allowed. Pariani has strategic facility locations in areas like Piedmonte and Sicily, so they are able to obtain the certification for nuts like Nocciola Piemonte I.G.P Hazelnuts, which is the equivalent of having to be located in Barolo to be able to put Barolo on the label of a wine bottle. Pariani sources some of the best nuts in Italy, and during a taste test we did a few weeks ago, we faced off Pariani against a good quality brand from the store, and after tasting through everything, we felt like we've been lied to our whole lives. Pariani nuts are decidedly more flavorful, fresher, succulent, and made the store-bought seem dry and bland. Such excellent texture and richness, it is unbelievable. I've never experienced a hazelnut or pistachio that lingered on the palate like a fine wine for almost a minute. These are the perfect healthy snack with a nice glass of wine or put out with a charcuterie platter with Champagne, we had some out during Thanksgiving, and they did not last long! Roasted IGP Piedmonte Hazelnuts with Cervia Salt
Hazelnuts from Piedmont are considered the best in the world, and these are Nocciola Piemonte IGP, a variety of protected Hazelnut native to the Langhe. Gently roasted and tossed in salt from Cervia which is harvested in the flats of the Adriatic in Emilia Romagna and was for a time the only salt the Popes would use. These are delicious and intense with a lingering flavor that is great just by themselves. Rich in fiber, polyunsaturated fatty acids, minerals, and omega 3, this Hazelnut is highly energetic and is said to help prevent cardiovascular diseases.

A new nut we have just brought in, Sicilian almonds are the best in the world, and is a classic part of Sicilian breakfast with nearly half of the population enjoying almond granita on any given morning. Its a staple to the region just like the Pistachio, and as mentioned Pariani opened a facility in Sicily to ensure the highest quality possible. Unbelieveably fragrant the bitter skins have been removed leaving the heart of the nut which is rich, and moist with an unmistakable expressive almond flavor. These are peeled and unroasted so you can use them in a varity of applications, as well as salt and roast them to your liking. Great in desserts, salads, or as a healthy snack. Thanks to their high content of iron, vitamins, folic acid and fiber almonds are a valuable food for health, especially to control the cholesterol level.

These Pistachios come from Bronte Sicily called Bronte Pistachios and have a telltale exotic purple-hued skin. Grown on the volcanic soils of Mount Etna and are only harvested once every two years, and in years of poor quality, the farmers will prune the trees, so nothing grows. These are known as "green gold" due to their price and have a fruity, earthy, and elegant flavor that slowly builds in intensity. These are great as is but can also be used to make Pistachio Pesto. Rich in phytosterols, vitamin E, iron, and potassium said to be a powerful ally to control bad cholesterol and fight against anemia.
