Moutarde Forte is back, and this time two other varieties have been brought to the States. The first is "l'Ancienne," which is an ancient style of grainy mustard, one of the best I've personally ever tried. This one is slightly sweeter than the "Forte" and has a few different spices added. It comes across as more mellow than the Forte as well, so those that prefer milder mustard or fans of grainy mustard, in general, will enjoy this. Perfect for sauces, dressings, and whatever you desire. The second, "Au Mout de Raisin" is Grainy mustard as well but has grape must added to it, turning it to a deep purple color. Au Mout de Raisin is the mildest of the three and has a fantastic balance between salty and sweet. This one would make an excellent glaze on pork or a perfect component for a unique vinaigrette. It's hard to say which is the best; they are all very different and delicious; it just depends on the mood or occasion.
