This is the newest sauce from Casina Rossa and is made with wine from Montepulciano. The reduced wine flavor adds a lot of depth and richness here that is wonderfully balanced with fresh herbs and house-made extra virgin olive oil. This works with long or short types of pasta and pairs very well with egg pasta. This is also a great base for a ragu and can be used as a braising sauce with meat or beans. This is a sauce that genuinely captures the region and is downright delicious.
We are working with a newer purveyor of fine Italian Artisan foods called Ritrovo, who sources food products from small artisan producers in Italy, giving many a shot at selling their specialty products abroad and not just locally. The husband and wife team at Ritrovo met Nicola DeLaurentiis of Casina Rossa in 1999 at an Italian food and wine event and won them over with the incredible small-batch pasta sauces that he was making in the Abruzzo countryside. Years later, Nicola is still making his sauce's, winning a few awards along the way, and developing recipes alongside famous local chef Dino Pagivelli to be as authentic, fresh, and flavorful as possible. All the vegetables and other ingredients for these sauces are sourced from the absolute best local growers and are used immediately after harvest for the best nutritional value and, most importantly, the best taste. I've always been skeptical of premade sauces, many of which have an unpleasant acidic flavor, so I had high hopes when we were given a few samples of the Cassina Rossa sauces. My expectations were blown away, and then some. These aren't just the best premade sauces that I have ever tried; they are also better than what some restaurants serve. The depth of flavor, freshness, balance of acidity, and richness here is fantastic. These are unbelievably good and so easy; just heat and serve and, and you have authentic and delicious pasta sauce straight from Italy. Many of us at Envoyer have grabbed a few bottles to have at home to try with our different kinds of pasta, and it has quickly become one of our favorites. There is no point in making sauce after trying these, your guests will think you have trained in Italy, and your family will never want to eat out again.
