One of our favorite sake producers, noted for their traditional Kimoto Style, Ryusei has supplied us with some of our top sellers of all time. We ordered this months ago and have been patiently awaiting its arrival and finally it is here. These were just bottled and are as fresh as can be which is the best way to drink sake. Like the Bekkakuhin and the Gayro Tensei we have offered before, this uses 100% Yamada Nishiki rice, the most noble of rice varieties. The name Nama refers to no pasteurization used which gives the sake an extraordinary freshness and outstanding acidity. This has a very expressive nose of white flowers and orchard fruit. The palate comes in phases, starting very pure and fruity with a slight sweetness and leading into an explosively rich finish with a racy acidity that slices right through. It’s such a unique experience and unlike anything we have ever tried before. Serving recommendation is cold, from 40F to 50F and because of the richness this can stand up to fattier fish, meats, and even cheeses with ease while still providing a palate cleansing feeling. Our top choice at this price point and being a limited-edition bottle, it is the only place you can find it in the world.
