We were able to get a bit more of these milk chocolates for the holidays from Sicily's premier Chocolate maker. These are delicious, and while we typically only go for dark chocolate, the "Latte" line has won us over. Don't be discouraged by the inclusion of coffee and salt because the balance of these bars is so spot on that chocolate is still the main stage and simply delicious.

Sabadi is an exceptional Chocolate producer from Modica Sicily, gaining popularity for the unique cold processing technique that is the signature from this part of Italy. Sabadi is the top producer of Chocolate in Modica and, for the last nine years been awarded Italy's "Tavoletta d'Oro," which is like winning an Oscar for Italian chocolate. The Aztecs inspired Modica Chocolate through the Spanish explorers brought back techniques they learned while in Mexico, teaching the Sicilians the methods they still use today. They perfected the process for Modica Chocolate based on what they were taught, using traditional round volcanic stones heated over a small fire. The chocolate is rolled and pressed on the volcanic stones into a rough paste until it reaches about 100 degrees and is essentially an ancient way of cold processing chocolate. Since the chocolate is worked at a low temperature, the Cacao and sugar don't fully melt, developing the signature Modica texture with a soft crunch of small almost-melted pulverized granules of palm sugar, making it very satisfying to chew. The chocolate also retains more of its nutritional properties that are usually cooked out during processing, like antioxidants. Sabadi has excellent purity in their chocolate, showing red fruits and a savory, earthy characteristic with just the right amount of sweetness that plays to the bar's natural bitterness. The addition of milk rounds out the flavors and adds to the overall deliciousness of this chocolate. While we typically enjoy dark chocolate more, these are sensational, and the extra creaminess and sweetness, coupled with the texture, make for a profound experience. There are three thoughtful and very well-balanced flavors to choose from here with a varying degree of Cacao. We currently have the only Sabadi available in the US but could only get a very limited amount but will be getting more in the future. Currently one of the best milk chocolates we've ever tried, and we just might prefer these to the Sabadi dark.
Papa 58% Cacao 1.76 oz
The Papa has the highest percentage of Cacao in the milk chocolate line, making it the least sweet. Excellent balance of aromatic chocolate, creaminess, sweetness, and bitterness. A Sicilian take on chocolate classic.
Nono 53% Cacao (Coffee) 1.76oz
Nono (Grandpa in Italian) lands in the middle at 53% Cacao, and is slightly sweeter and sees the addition coffee. Still a good balance between sweetness and bitterness, the coffee adds a layer of complexity in the background letting the chocolate take the lead. Very impressive.
Mamma 48% Cacao (Fleur de Sel) 1.76oz
Mama sees the least Cacao, but the addition of Fleur de Sel creating a beautiful salty-sweet dynamic within a creamy chocolate flavor. These flavors complement each other so well and make for a mouth-watering delight. One of the best salty-sweet treats we have tried.
