I have a love-hate relationship with truffle products, the idea is always so enticing, but they are somewhat disappointing when it comes down to it. Fresh truffle has an intensity and earthy richness that has a hard time translating to a shelf-stable product. However, that all changed when I tried the products from Savini Tartufi. This family has been foraging for truffles since the early 20s before it was cool. While a modern company now, they have maintained an impeccable level of quality and integrity. Savini Tartufi collects seven different types of truffles throughout Tuscany, and this salt features black summer truffles, also known as the Scorzone truffle. As soon as the seal is broken and the jar is open, the pungent fragrance of truffles fills the room; I must have smelled the jar for a solid minute, and it is incredible how much this smells like fresh truffles, transporting me to Tuscany. Instead of the salt infused with some truffle extract or oil, there are actual truffle pieces pulverized in with the salt, explaining the flavor intensity. A little goes a long way here, but go as heavy as you want; 100g should last quite a while. This is perfect for turning up the flavor on simple dishes and adds a gourmet feel to a home-cooked meal.
