Back by request, we have had a few clients ask for more of this excellent value from Suigei. Finally, we were able to get more, and after hearing so much excellent client feedback, this is one of the best bottles in this price range. A fantastic Sake that we just tasted yesterday, the Suigei Harmony is an incredible and unique value that has almost instantly gone to the top of our lists in this price range. A while back, we offered the Suigei Daito, one of the ultimate Sake's in today's market, and the MANN, which was another higher-end masterpiece. Harmony follows the same code of quality that has become synonymous with Suigei and is an incredible way to get familiar with this brewery.
Founded in the Kochi Prefecture in southern Japan on Shikoku island during the Meiji period in 1872, the name Suigei means 'Drunken Whale' (a phrase featured on the front label) and honors Yamauchi Toyoshige, a local lord at the end of the Edo Period. Yamauchi's domain was a whaling area, and he loved to overindulge in Sake, referring to himself and by many as Suigei, or 'Drunken Whale.' Today Suigei represents the pinnacle of sake production, not just on Shikoku but in all of Japan. Suigei makes a wide variety at many different levels using techniques that are cutting edge and not afraid of bending the rules of tradition to create a superior product as the only Brewery in Kochi.
Harmony is a new Sake from Suigei and is the creation of Master Brewer or Toji, Makoto Myoujin, who has dedicated his life to agriculture and Sake since 1995. Makoto joined Suigei in 1997 and, after working his way up, was appointed master brewer in 2016. Harmony takes a unique approach to Sake and is one of the few blends that we have seen. It is the combination of multiple Junmai Daiginjo's that Suigei makes showcasing different styles, which translated are; "Magnificent and fragrant Junmai Daiginjo", "Flavorful Junmai Daiginjo full of rich rice umami", and "Crisp Junmai Daiginjo that you'll never tire of drinking". These three on their own are fantastic in their own right, but when combined with the deft hand of Makoto Myoujin, the results are absolute harmony.
Harmony takes a bit from each of the Junmai Daiginjo's that it is made with, creating a beautiful, multifaceted array of flavors and fragrances. It starts very pure and fruity with some tropical notes of papaya, guava, mango, and melon, and with some time in, the glass starts to open up and bring more savory nuances out like cedar, wild garlic, tobacco, and leather. Harmony has incredible depth and complexity at this level with a silky texture and restrained sweetness that also shows spring water minerality. It unravels in layers across the palate, switching between crisp, pure fruit and more savory, umami notes with an excellent interplay between richness and acidity, finishing very long and lingering on the palate for minutes.
Harmony is one of the best Sake's we have tried at this price point, and as it stands, we have the only bottles of this new creation outside of Japan. Highly recommended for all Sake drinkers, this holds an excellent price-quality and is a joy to drink with the potential to pair with many different foods or just by itself.
