Toro Albala is one of the best producers of Sherry, their tremendous backlog of vintages and prestige releases with 50 or more years of age are genuinely some of the gems of the wine world today. These complex, profound masterpieces wouldn't be possible without Antonio Sanchez, master winemaker, blender, and all-around extraordinaire of Toro Albala. His guidance and deft hand for finding the sweet spot for these wines and seeing the future potential in vintages puts him in the upper echelon of winemakers in Spain today. This is important because Antonio Sanchez also takes vinegar very seriously and is the master vinegar maker at Toro Albala, with the main ingredient being Crianza made from Pedro Ximenez. Antonio follows the tradition of vinegar making, which dates back to the Babylonians but applied in an untraditional way to make Balsalmic from Spanish grapes. Many might remember our offer of the 50-year Balsalmic before, which has since been discontinued and replaced with this new 50-year Premium balsamic they call the Grand Reserva. For the 50 year, Solera de 1960 de Toro Albalá is used to which a small amount of the oldest Pedro Ximenez they have available is added. The blend is aged in oak until the perfect harmony is reached, i.e., the proper color, aroma, and taste set by Antonio Sanchez. The age of the vinegar is certified by analytics. The 50 year is dense and complex with roasted cocoa, dried figs, dates, iodine, and honey and has an incredible intensity, depth, and persistence, with this version of the 50 year being denser and more complex. This vinegar represents the beauty of Toro Albala. It is some of the world's best and rarest Balsamic with an excellent balance of sweetness and acidity that isn't cloying and overly viscous like many of the expensive Italian Balsalmics are. These are very rare outside of Spain with little to no importation, and these came directly from Toro Albala just for us. This is an excellent gift for those who love Balsalmic, and if you tried the other Toro Albala vinegar, this is even better and highly recommended.
