However, they also make an excellent range of award-winning Sherry and Balsalmic Vinegars and have been doing so since the mid 20th century. This traditional process of producing and aging vinegar is kept alive by the old-school wineries like Toro Albala. At the top of their list is the 50-year-old Gran Reserva Balsalmic made by Antonio Sanchez, the winemaker for Toro Albala. All of the vinegar from Toro Albala starts as PX Sherry from one vintage transferred into Spanish Oak for extended aging.
Having such a fantastic starting material creates profound, deep, and complex vinegar. With the long aging, the vinegar also starts to show unique characteristics of the vintage. Many Balsalmic vinegars that have this much age tend to be very sweet and rich like a syrup, while delicious, this is not that. Toro Albalas Vinegar is the perfect balance of sweetness, acidity, richness, freshness, and age. The aromatics are stunning with plum, raisin, dried cherry, licorice, herbs, tobacco, leather, and a very mild vinegar note. The palate is in perfect balance with a touch of sweetness that leads to a full richness brightened up by excellent, mellow acidity. The Gran Reserva pairs best with foods that show off the vinegar like mild cheeses, simple salads, soft meats, fish, and Toro Albalas recommendation; with strawberries on vanilla ice cream.
