These are the last bottles of the 2018 Gastronome we have, and we are offering 10% off on 3 bottles or more today! The Gimonnet family has been in the Village of Cuis since the 17th century, working the vineyards as laborers, sharecroppers, and winegrowers. The Gimonnet house is one of the main assets of the family, and today, they own almost 30 hectares of prized Champagne vineyards. The Gimonnets have always been driven to make the best Champagne possible. This dedication has not gone unnoticed, becoming one of the favorite addresses for grower Champagne among the savvy.
Gastronome was a cuvee created in 1947 by Pierre Gimonnet and was historically made for restaurants to serve by the glass. A blend of 100% Chardonnay sourced from the Grand cru vineyards of Cramant (39%), Chouilly (24.5%), and Ogier (3%), along with some premier cru fruit from Vertus (10.5%) and Cuis (23%). Naturally, this goes very well with food and is designed to have finer and lighter bubbles thanks to a lower amount of sugar during the secondary fermentation, giving it a gentle effervescence with a creamy texture. Fresh, elegant, and balanced after three years on the lees and a 5-gram dosage, this is perfect for an aperitif and beyond.

The palate is full and rounded, with a coarser mineral texture throughout compared to the other cuvée. It has wonderful salinity and takes on a more savory expression that I find quite attractive. This feel slike it has the structure to carry on for 2-3 decades to come. (Drink between 2022-2052)"

I would give it a few years in bottle to soften, as some of the edges are pretty angular at this point. I very much like the depth and vinous intensity of the Gastronome in 2018. Pear, dried flowers, chamomile, mint and spice build into the deep, potent finish. Dosage is 5 grams per liter. Disgorged: April 7, 2022.(Drink between 2022-2030)"
